September 2024
The fruit came in from the Rogue Valley full of energy—bright, expressive, and already hinting at tropical aromatics. Picked at peak ripeness and pressed the next day, it went straight into neutral barrels. No additions, no heavy-handed moves - Just clean fruit and time.
October 2024
Fermentation took off quickly. Each barrel had its own rhythm, but all moved with momentum. Temperatures hovered around 65°F, with sugar dropping steadily day by day. This wasn’t a slow burn—it was confident and clear from the start.
Within the first 24 hours, things had already shifted dramatically. You let it run its course, trusting the fruit and the native yeast to do what they needed to do.
November 2024
By early November, the wine had found its shape. Fermentation was complete, and the numbers landed exactly where you hoped—balanced acid, dry finish, and the structure to carry its aromatic intensity.
No MLF, no corrections, no drama. Just careful observation and one clean racking to settle the lees.
Winter 2024–2025
The wine rested through winter. Nothing forced, nothing rushed. Bright pineapple, white peach, mango, and a clean citrus lift stayed present from barrel to bottle.
Spring 2025
By spring, it was ready. A fan favorite before it even left the cellar. No adjustments, no filtration. Just wild-fermented Sauvignon Blanc, full of sun, tension, and lift.
